ex cards are just like normal cards but generally stronger and give up two points when KO'd instead of one. most decks revolve around one or two ex cards, with non-ex as support. mew ex was a lot better in the past, now it's mostly a tech card.
for a pack to pull i'd suggest extradimensional crisis, the most recent pack. there's a lot of strong meta cards in there, like the UBs and silvally. silvally in particular is really important since it's absolutely running the game right now and it's 3-diamond so it's easier to pull than ex cards which are 4-diamond. the UBs are getting a wonder pick event soon which will make them easier to get as well.
should be enough to get you started, at least. at some point you'll want to trade for old staple trainers, but don't worry about that until you actually have the mons necessary for a good deck.

You can’t easily pivot due to 2 energy retreat on solgaleo and you would often need a perfect scenario to get Oriocorio in the active spot
Example, KO Sylvally / Zeraora with Solgaleo and then they bring up a benched Sylvally and still have 2 Pokemon on the bench, you could get revenged by Sylvally depending on your HP and not be able to force a Magearna revenge on Oriocorio with a Sabrina
