any physical attacker you want to raise the physical defense of

really picking a nature is really simple. pick a stat you want to raise the most, pick a stat you won't mind lowering

The only time I can recall ever using Impish nature in Gen 3 OU was for a Dusclops build. With Will-O-Wisp and Pain Split, it becomes a physical wall, and you can use Shadow Ball or Night Shade as an attack.

Thing is every stat but 1 is useful on everything but mixed attackers so they have an obvious dump
