That's Eternamax which is a proper form change with different stats. Gigantamax is just a different move but it's otherwise identical to Dynamax, as stupid as it sounds (like sure these two rats have the same exact stats why not)

Imagine combining z-moves and megas, but these moves set weather, terrain, stat buffs, stat debuffs, status conditions, 1/4 damage on both opposing mons every turn, and the D-max mon gets 2x health.

The no need of item is the dumbest part imo. Sure you can't use some of them because they stop working but only a few of them, and they work again once the effect runs off (except the secondary effects from your super duper giga moves remain). Yeah, it was definitely not comparable to megas or z moves, it blew those out of the water in terms of sheer power.
I'm only talking about the mechanic in the context of how it worked in doubles, but it was way over the power threshold for what should exist.
I wonder if anyone counted the average # of turns in a match at Worlds 2022. I bet it was 1 or 2 shorter than Worlds 2019, which was already a very powerful meta.

Lorewise are simply alternate projections that are activated by Pokémon that have a certain gene. I don't know if the special soup modifies their genetics.

But personally, I prefer to think that certain Pokémon were trapped in that form, and that's the beginning of legends about gods* like Poseidon (Kingler), cryptids like Nessie (Lapras), mountain trolls (Grimmsnarl), or giants from British folklore like Gog and Magog (Machamp or both Urshifu). In that form, those Pokémon must have consumed a lot of resources, so they would have remained asleep most of the time, like the giant Pokémon in the anime.

*Obviously the equivalent that the pokeworld uses

The no item is the part that makes it good. When you have to pre-commit to a gimmick user your hands are tied on the team preview screen where you have to decide "do I drop my user or take it into a bad matchup because in both scenarios I'm fighting an uphill battle." It's the problem Megas had and the same problem mono restricted formats have. Being able to pick your dynamax or tera user on the fly is what makes them so much better gimmicks because you can always find a good user for it. Dynamax's problems were just the actual implementation; max moves were just a little too strong and max mons had too much extra HP.

You didn't have to commit to a mega and you didn't have to bring it. Many teams brought 2 megas, one to bring in one type of matchup and another in case that doesn't work.
While D-max in theory was useable on all mons, in PRACTICE you had a pretty strong idea of what to expect since it was generally used to make the rich richer.
22 with the double restricted format demonstrated that pretty clearly.

It's universal and relatively inoffensive in the way that Dmax particularly was.
It doesn't tend to speed up games since often times tera is committed to keep a pokemon alive rather than double dip into STAB.
I tend to agree, though I enjoyed mega evos in the 2014 doubles meta immensely. It was the first time that breeding a competitive team became viable and that year so many mons were on the table since no restricteds or transfers.

Making them holograms that just LOOK like giant pokemon is so fucking stupid. What's even the point? Pokemon canonically can shrink naturally so making Eternatus' gimmick that it makes pokemon grow instead wouldn't have been that weird, but no, they just create holograms that interact with the world exactly as if they were giant pokemon, so to all effects they are giant pokemon... except they aren't supposed to be.

Their appearance changed, but their size remained the same; only gaining a temporary defensive boost form it.

Dynamax energy magnify the monster's appearance and allow them to preform max moves in place of their normal ones; but that's it. Only Eternatus grown to its "original size" once it regained all of the energy it lost from the fight with the heroes of Galar (note this is head canon, I like to think that Enteramax was the form it took as it arrived to the Galar region and inadvertently caused the darkest day).

There was no difference, in early regulations Tera coin flip bullshit was just as common ex Trick room setters, various cheese Armarogue sets, Goldengo, Dondozo steel to avoid clear smog, grass Tera, etc. Dyna is stronger but it was more predictable and both players can do it, Tera was too fucking annoying

This is from a cgi trailer for SwooShit but I think it's the same in game, when you gigantamax you see the pokemon growing in size (or rather generating the hologram) and the giga look is there since the beginning

Having a mechanic that buffed your Pokemon that much would have been better recieved if it were exclusive to a select few Pokemon and you didn’t have the luxury of a regular item.
Sure, it might still be too powerful, but I think Dynamaxed Charizard that can’t hold Boots/Weaknees berry or Dynamax Coalossal without Weakness Policy is way easier to handle than Dynamax Calyrex or Dynamax Gyarados, which could still hold items.

Why?
The cinematography and spectacle on display is great, all the moves have the appropriate amount of heft and power behind them, all the new designs are great.
About my only complaint as a casual is not giving the starters alternate forms until the DLC, that was really the ultimate pisstake, even if admittedly I tend to prefer not using the mechanic and just letting it be a boss thing.

Because not only the cinematography and spectacle is poor you sad film school reject, many of the designs are shit like the one you posted and the actual battling is the worst part because it only highlights and enhances Pokemon's problem with melee attacks' animations, it actually gets rid of the few decent animations they have and turn battles into boring staged lightshows, instead of having ACTUAL kaiju battling, tackling, punching and biting eachother they just stand there, look at eachother and summon the animation to pretend they are fighting themselves.
I don't know if the anime fights truly looked like this all the time or not but if they did then the anime saved Dyna/Giga shit, but in the games? lmao in the games Dynamaxed pokemon fight like a Showdown pokemon, just with a prettier effect. Nothing makes you feel the sheer size of these pokemon. Nothing makes you shit your pants as giant approaches you. Nothing feels like actually fighting against a colossal monster who would stomp you easily. Nothing makes you think "this is a kaiju battling", you just see a standing big pokemon calling forth some sfx, it doesn't even change based on the enemy pokemon being dynamaxed or not, it's just
