That would make a large portion of the dex the Dragon-type (they're not rare), and all almost all the most powerful ones Dragon-type. Any if there's one (1) you decide to give a more creative typing, you'll have a permanent community of autists complaining why it wasn't given a Dragon-typing.
Getting rid of Dragon-type in Monster Hunter let's you have a more diverse and balanced lineup. It's not like there are going to be many Fairies or Steel-types and will make many of the elemental wyverns total shitmons

Not really (not from the MH side at least), Dragon element monsters are pretty easy to grasp which are either fully fledged Elder Dragon or Elder Dragon tier with a few odd balls like Akantor
