SNK was better than Capcom, just gonna say it. Games require more finesse, character designs have more edge and coolness (you want to play as more people than ryu/ken/guile), the graphics were usually a bit rougher but a sign of a poser gamer is caring about graphics, so I kind of like it.

SNK games in Japan were historically aimed at casuals: less balanced and competitive, more cosplay friendly. Cosplayers were the main SNK audience back in the Neo Geo days.

I don't like how Capcom fighters are mostly weird and bulky shapes. Call it autism but I only want to play as relatively normal shaped characters, so 70% of the Darkstalkers roster is off the table for me.

Only SFII cast is iconic, and that's because it was the first fighting game as we know the genre. Tekken is just as popular but most people can't name many characters/they get parodied in media less. SFII has the advantage of being the first to blow, and MK the second, so those characters are not just highly remembered but also homaged in pop culture a lot. Notice how no SF character after II has become iconic in any way, nobody who isn't a big fan knows who Alex, Charlie, or Abel is.

Iconic means that even people who don't play the games know who they are, out of all of those maybe Sakura could ring a bell. Even if you never touched a fighting game, you know who Ryu and Chun Li, same goes for the rest of the world warriors even if you don't know their games, in SNK, the only ones I knew were Terry, Mai and Iori, but I'm kinda cheating with the last because he looked like a total psycho and passing though the arcade machines demos and seeing his gameplay made a big impression on me.

I think that was true back in the 90s, but kids today don't know any of that. Like, I've had conversations with people that play games and have no idea who Ryu is. It sounds insane to me, but they were too young to remember SF at the height of it's glory.

Now probably most people know Ryu as "the karate guy from Smash"

This is the worst place to talk about SNK objectively because SNK was big everywhere besides the US,making something like SNK vs Capcom an obvious crossover goldmine as much as pitting Capcom against Marvel, another recognizably popular franchise with characters punching each other.
Meanwhile no one outside of the US ever gave a flying fuck about Mortal Kombat, but that's the second best known fighting game series in the US after Street Fighter.

You are underestimating how huge Street Fighter IV was, how that resparked and created a lot of people's interest in fighting games again, and how characters that first appeared in Alpha or III are considered mainstays to them because they appeared in that roster.
I know normies and zoomers who know who Elena is, which was way less likely even a year before IV came out. Same for R Mika and fucking Dudley. Sakura was always kinda memorable.
