Resident Evil 1 is a pretty contained package that does what it needs to do and loves its job doing it. Tough with Chris, but not even its copycats or sequels quite get what the first game put down. 2 is a lot more action packed, for good and bad, with less backtracking and complexity as well as focusing a lot more on scale over much else, and 3 then streamlined that back to a much more narrow game but technically ambitious for what it brings to the table in its own ways at the cost of no more survival horror whatsoever.
I'd genuinely say RE1, classic or remake, is pretty much the bread and butter of the franchise that needs to be experienced, and the other two games are their own circumstances that don't really try to do the same thing beyond the core mechanics.
