That's part of the fun, you're supposed to get better by playing it not just run through it like an amusement park that ends in one hour to buy a new game. Games were fucking expensive back then.
I like how DKC2 has three levels of completion. You can just get to the end of every level and beat the bosses and get an ending. Then you can use the Kremcoin cheat in the first level(or do 75 fucking minigames), and go clear the harder lost world levels for another ending. Then the final challenge is to hunt down all the DK coins for perfect completion.
First go-around is a decent challenge once you reach the swamp, that steadily ramps up all the way to the end. Second round has a very challenging boss at the end. Final challenge requires you to be able to easily navigate every level to find the coins, which you should be mostly capable of after completing the first two.
Donkey Kong Country literally let's you jump midair, it's straight up impossible for these games to ever been "too difficult" for that alone.

Luckily they made something for the pleb babies that like easy games. It's called DKC3. (not counting the final levels)

Generally DKC1 is considered the most difficult of the trilogy since there's no Dixie.

In terms of everything else they're repetitive and bland subpar platformers with pixel perfect rote learning the only way to progress. In no way should they be mentioned in the same breath as actual classics like Super Mario World.
