The Mipsy challenge I had to look up a solid chunk of though. Not sure how you'd ever know how to start the challenge without the guide videos.

You're not supposed to find it out. You get it as a reward served on a platter if you 100% the game otherwise (only then can you open the last gate in Project Dream). Mumbo then shows them, just like in BK if you found all jiggies.

I must have missed the prompt in-game in the temple. I had to go online after half an hour of searching the Diddy Kong Racing level for a coin only to find out I have to stand on that one tree

DP has that one building, which you can only open by using all remaining jiggies at the pedestal somewhere else in that world - which you can only get all when collecting all 1000 notes for that one note door. That then opens the door, take the final collectible (the "ultimate power") and exit though the other door in the wall. That starts the "cutscene" in which they take a vacation and Mumbo showns them the pictures of that last secret.
