Are there any 8-bit game that look as good as Castlevania?
Most other 8-bit games are visually crude, nothing more than repetitive tiles and basic sprites thrown onto flat, lifeless solid colour backgrounds, completely lacking depth or atmosphere.
No sense of depth, texture or even artistic cohesion.
Just plain ugly.

Have you literally only played early NES games? Past 1988 and especially in the early 90s there were tons of great looking ones.

Well, Castlevania 3 makes Castlevania 1's graphics look amateur. To say nothing of late release games like Ninja Gaiden 2/3(1 is about on the level of CV), Megaman 6 or Kirby's Adventure.

In terms of pure graphics there are definitely superior games, but as far as art direction goes few games on the system even come close to CV1 honestly. Replayed Little Samson not too long ago and on this playthrough the art direction really amazed me, the diversity of enviornments is amazing.

You're exaggerating a bit for your pet game (typical /vr/ behavior, everyone does it) but it does look good. CV1 in general is a really solid experience. Looks good, sounds GREAT, the gameplay has this fun rhythm to it, it's challenging without being unfair and can be beaten in less than 30 minutes if you know what you're doing. A very sublime NES experience.

part of the reason the game looks so good is how dingy and grimey everything looks. just look at the wall. most games would just have repeating tiles with no variation

If we're talking about 8-Bit in general, I'd say a lot of the Game Gear's library looks pretty good still.

In general, SMS games look much better than NES. The NES had a limited and somewhat drab palette, although in the case of Castlevania that worked in its favor by giving the game a grim look.

Muted colors are actually preferable when you have a limited palette or else you get eye-rape
In extreme cases like only 4 colors, monochrome is arguably preferable
