I don't want to sound schizophrenic, but I feel like the AI is different for each character in this game.

It is. Hudson said they were proud to have different personalities for the characters.
Also the favourite items. They are not just flair, they really try to go for them more (which makes games with CPU DK (Bowser Bomb) very interesting...) but of course not FIXATING on them.
