Race maps with little secrets and collectibles, that's emphatic of Zelda game design. Not just shortcuts, but unlockables and such first and foremost, but I have an idea for opening up shortcuts in singleplayer campaign, and the final challenge being a huge continuous race through every map unstopping, and yeah the shortcuts you opened need to be utilized to win.
I think the racers are probably like; Zelda on horseback, Link wearing bunnyhood, Darunia the goron, unlockable characters are probably; Shadow Link with devil horns, Toon Link in a locomotive go-kart, Monkeys on a barrel, King Bulbin on a boar, Adult Link on the master cycle zero.
I think the campaign should have a straightforward story, the triforce has split into shards across race tracks, they are like silver coins in Diddy Kong Racing, you have to grab them all and cross the finishline in first place to win. Racing itself is subject to the triforce wish probably, maybe it was Tingle who had the wish granted, and maybe he oversees the races and keeps them clean using inherented triforce powers for the duration of the tournament. There's a hub world to explore, not too grand or extravagant, and winning races to unlock the next tracks, and a boss battle after every three tracks, where they are inspired by Goht from Majora's Mask requiring a traditional Zelda routine while racing for first place to defeat. Final boss is a race against Vaati wearing Majora's Mask, across every track seamlessly connected.
