I completed the collection, now I have the trilogy, all are very beautiful but the best is AC 5 Squadron Leader (or The Unsung War), the other two are very similar.
I closed them all several times.

yeah 5 is my favorite too, 0 might be a better game and 4 has that excellent side plot but 5 really nails every single aspect, absolute gem of a game in a trilogy of 10/10s

I finished the trilogy last year. I think the AC games afterwards are also good.
I think there is also AeroWings, AirForce Delta, Crimson Skies, Sky Odyssey and IL-2 Sturmovik.

check out the energy airforce series, they try for a much more realistic approach than AC but they're still pretty fun
there's also the aerowings games on the dreamcast, iirc they're more about pulling off flight maneuvers accurately than actual combat, but i haven't played any of the sequels which are apparently more combat focused
