PS or GC?

Doesn't really matter as they're both really good versions. The GameCube version is the only official fully uncensored release, though there's a patch on PS1 to remove the censorship.

I say play PS1 first since the facial animations (or lack thereof) are more convincing at 240p. The GameCube version is a great upgrade for replays though: higher res backgrounds and 60fps.

There is no bad version of (original) RE3 just versions with one or two advantage another version might not have.

Yes, and the 2D control scheme ("analogue controls" as you put it) suck ass. Literally nobody plays with those.
