If you're using a Wii just use VMCs.

Since a full ROM set is too big, I went down a full list of GC games and downloaded any that looked even remotely interesting. It came out at 79 games and 50 GB (rvz-compressed).

I have a 256GB card, ample room for all of the Gamecube games I wanted to play.

Exactly, I doubt people specifically want the Gamecube version of Largo Winch: Empire Under Threat

Is there any reason to use a gamecube over a wii? gamecube hardware is more expensive too

NGC has better interface and doesn't force you to use the wiimote just to click on the game.

Most GameCube models support digital out, so if you're using a modern display you can get an hdmi adapter that doesn't need to be converted, so no input lag added. Crystal clear output, and it looks amazing with a quality upscale. Wii supports component out, which can look nice if you're using quality cables. An hdmi adapter will need to convert from analog to digital which can add lag.
Other than that, there's isn't much difference besides other minor things.

I have a 256 GB microSD in an SD2SP2 and it still has a decent amount of free space, I imagine 128 GB would be just a bit too small

Only major reason is GameBoy Player/Interface. Otherwise Wii has cheaper components cables.
Another poster mentioned the HDMI adapters available for DOL-001 models and that uses actual digital video directly from the system so it's "lagless" which is nice.
I've also seen some comparison shots indicating that even with component cables on both systems or the available HDMI options that GC is a little sharper so some people want that.

Maybe 8gb. Animal Crossing, Rouge Leader, Metroid Prime, Melee, RE4, Mario Golf, Monkey Ball 2, and if there's enough room Sunshine for when I get bored and want to mess around in Delfino Plaza with the rocket fludd.
