How easy is it to repair GC controllers?

I've read several reviews of the aftermarket stick caps that they have some sizing issues (like they're too tall and don't fit under the front shell very well). I don't know where to find replacement stick modules either.

Inside of Wii Nunchucks. It's an easy desoldering job.

The stick caps are a mild annoyance, however I stuff part of a cotton swab tip into them (not the whole thing), and when pressed onto the stick stem they sit nicely and are appropriately clacky and do not get stuck on edges.

Pictured is wii nunchuck pcb's which have sticks on them I was about to remove. All of these can be dropped in to a gamecube controller to give them that brand new feel with genuine OEM parts.

I do it to ones that are in a state of disrepair. Damaged or frayed cables, chewn off analog sticks. To me they are not a device worth investing time and money on to repair. They are plentiful, cheap and useful parts can be harvested to repair significantly more high demand and rarer items.

they are baby easy tier to open compared to a modern controller.
Some revisions even have solderless stickboxes but I'm not sure how you're supposed to source new parts for those.

I'd argue as far as controllers go it's very easy, I've done two (my controllers I got with my bundle on launch) and had no issues, and I'm no expert on fixing old stuff by any means

Just some extra notes to OP this poster isn't mentioning; Wii Nunchucks only have mostly have T2 and some T3 stickboxes inside them. You have to match the stickbox up with the one on the controller. Early GameCube controllers are all T1. T2s are slightly better and T3s are by far the best.

I import a lot of retro stuff from Japan for my business. I just got 100 official nunchuks for $18.30 USD. I ship it with multiple consoles, JP White GameCube controllers, Hori Minipads, the international shipping per item comes out to nothing.

Not necessarily. They're all mitsumi and they're all drop in, the only exception being the plastic box ones which will only fit in controllers with those boxes (and have screws to mount.) However if you're feeling thrifty and want to use a plastic box on a metal box controller just flush cut off the bottom key pegs on the stick and you can solder it into place.

The plastic ones are T3s, which I focus on since Melee Pros are a large portion of my customer base. Maybe you are right about T1s and T2s being interchangeable.

It's not ideal but the Wii sold way more than the GameCube. At the moment there is a lot of supply for the Wii but not as much demand. In that situation things will inevitably go to waste, so we might as well use them for something.
