Despite being limited to about 16 colors but running in a high resolution 640x480, I remember Cobra Mission having some of the most gorgeous pixel art. The map/exploration portions were low res and basic in looks, but the key scenes and some enemy encounters also had some very nice artwork utilizing the higher resolution and dithering to make up for the lack of colors. The memorably beautiful pixel art made Cobra Mission a childhood favorite. The game's pixel art demonstrates certain possibilities and advantage of a higher resolution, despite the 320x200 VGA having more colors available.

Always found the Westwood Studios games particularly beautiful. Kyrandia, Lands of Lore... They're gorgeous

Nah, I'm not OP but HoMM 2 looks great and the sprites are crisp and colorful. I did find the units from 3 to be a step down as they didn't stand out as much with less saturated colors. The overworld looks great in both, though.

As far as 640x480, 256 colors game go, HoMM 2 would be my pick. With Settlers 2 a close second.

For EGA, either >>11880193 or Monkey Island.

For VGA, there are lots of contenders.
Budokan blew my mind when I first saw it.
Flashback looks great.
As do many adventure games.
