It's the same reason people like fuzzy CRT filters and keep coming back to Vaseline smeared N64 games, it's about what you experienced at the time, what gives you that nostalgic feeling, and the experience that made people love the game at the time, on the PS2.
If you want to make that comparison though - the PC version has lots of HD mods and texture packs to improve it now, so really that's the version you should play if you want graphics quality.
