Dungeon Keeper 1 is pure Kino. And the only way to play it is on Dosbox staging, the site has a good guide, good default shader, so no config is needed.

If you're talking about those CGA only graphic games, these are what I remember:

Lode Runner

There are many games that offer multiple graphic options like CGA, EGA, and even VGA.

Kings Quest, Ultima IV, Montezumas Revenge, Carmen Sandiego are some of the top DOS-ROM apps which were later selected for conversion to the Sega System.

Lords of the Realm is such a comfy game, so check that out.
Realms of Arkania 1+2,
Might and Magic VI: The Mandate of Heaven.
And the obligatory dungeon crawlers like Eye of the Beholder or Pool of Radiance.
Could also try checking out Neverwinter Nights (1991) and see if you can get that working. Pretty comfy too.

You're absolutely right. Should've probably specified you'd only possibly want it over DOS 5 or 6.x on a machine that won't have more than a meg of RAM installed, so a 286 at best.

ever make use of the 10 peasant death army trick? for people who never played the game you have the option to let the cpu auto resolve battles, using it sucks cause even if you vastly outnumber the enemy army you always just lose 10-15% of your army anyways
so you can abuse that by sending an army of 10 peasants to attack the 1000+ strong army of swordsmen and archers, pick auto resolve and those 10 peasants will somehow kill 100-150 of them
