The real question is why are so many people trading in or selling their sega saturn's? I'm seeing them pop up everywhere at vintage stock or goodwill lately. Emulation is getting pretty darn close to cycle accurate, but we're not quite there. The problem is that most of the library is kind of mediocre, though there are some really solid titles.

What are some good games for the Saturn? Even the super-mainstream "Everyone has heard of this" titles, I have no idea what there is on the saturn

Yes
If you want maximum accuracy, use Mednafen/Beetle Saturn

They're good... the main question is, do they run on weaker hardware like PS1 emulators yet?

SSF was running fine way back on my Phenom 2, and it can play all the good games.

it may have problems with shit like Saturn Doom or NBA Live 98 but who the fuck wants to play those.

There's a new emulator in development called Ymir and so far it's promising:

Not yet.
Unfortunately, they all share design flaw that only allows them to play Sega Saturn games.

Mednafen/Beetle is the best emulator. Mednaffe is the best frontend, while the emulation wiki might lead you to believe MedGUI Reborn is better I can speak from experience that it is not. Or you can just use Beetle if you're insistent on using Retroarch.

Yaba Sanshiro and Kronos are good for the games they're compatible with but still inherit a lot of the same old problems Yabause always had.

SSF has been good for a long time, just hampered with a very shitty user interface that doesn't support normal ISO mounting and it's a picky bastard about the disc image format compatibility on top of that.

Ymir seems like a promising new emulator but it can't rival Mednafen or SSF yet.

Hoping it'll get good
Literally my only problem with Mednafen is that it doesn't have any sort of deinterlacing for 480i games. I know I can use deinterlacing shaders but they make the image blurrier
