I've heard shmups are the hardest, densest, most difficult yet rewarding genre out there, but every time I play a shmup it just feels like shit and the "reward" is absolutely nothing even after a 1cc, it feels completely empty and that I wasted my time
What am I missing?

What you're missing is that shump fans are not worth listening to. So what you heard from them is actually irrelevant to you. Here is how to handle this genre: If you dislike the games don't play them; if you like them play them casually; if you like them a lot play for 1CC; if you like them so much that even that isn't enough then get some help from people wiser than you and work on straightening out your misguided life.
