Dark Souls one, though it's not perfect.
To a certain extent the one in Metaphor was also good, because it was slightly more complex in how it also tied into a gold gimmick.

Mimics work best when they're rare, legit threat and actually functions are mimics in that they can trick you into thinking it's a real chest.

dark souls' design is principally antithetical to the mimic because the point of the mimic is to surprise the player and in dark souls you can only be surprised once.

It surprises the hell out of you that first time in Sens Fort, no other game can spook you with a mimic like that
Besides that they remain creepy throughout the game after that because they are so powerful, even though you test every chest from then on, chests always make you nervous for the rest of your playthrough because you don't know when it will suddenly jump up have an arsenal of several very high damage moves

the point of the mimic isn't to surprise you, it's force you to weigh the risk and reward of opening a chest but you have to actually make mimics a dangerous enemy and not just another trash mob. the reason dark souls' mimic sucks is because you can easily tell what's a mimic and what's a real chest so fighting one is unnecessary unless you want more souls.

Making a non-dangerous mimic is even worse.

I can't remember which game it was, but in it the mimics were so weak they weren'ta threat yet gave you good rewards. So opening a chest was always win/win with no threat to it. In fact many times I wanted the mimic depending on the chest reward, since if it was just basic consumables or something I'd much rather have fought the mimic.

I can barely even think of games with dangerous mimics.

I got an idea for a new kind of mimic
the mimic is the item inside the chest (the chest is its shell or whatever)
so you loot this cool new helmet that smells a little funny and wear it to the next boss fight and suddenly it's chomping your fucking head while a centaur or whatever is trying to kill you

They aren't aesthetically mimics, but there are plenty of dangerous monsters in boxes in games. Shit like Shinryu in FF5 or Dark Falz in PS2 are pretty memorable.

A fun idea but like the Dark Souls mimic, only really works once. There's some opportunity for emergent gameplay though, sell it to a shop, come back later and the shopkeeper is dead, drop it in a bandit camp, it kills the bandits, that sort of thing.

The Sen's funhouse mimic permanently made every single person afraid of opening a chest going forward. Even if you know 100% for sure that chest isn't a mimic, you hit it anyway, just in case.
