Check out the Rune Factory series if you don't mind the moe anime artstyle. I recommend 3 and 4
Of course there's always TES games but I'm sure you know that.

Theres a game called dysmantle and another called spirit of something that is basically offline runescape, the start of the game is you in your garage and then you get isekai into another world if someone can remember the name of the game

there are several "singleplayer" conversions of mmos you can download.
shit like wow with playerbots or ultima ruins and riches.

Jokes aside, I never found anything that quite scratches the RS itch. I think a lot of people don’t realise how much the aesthetic and atmosphere contribute to the enjoyment of the RS grind. That said, Fantasy Life is probably one of the closer ones. You could try Kenshi and Valheim but they might be too far away from what you’re after.

erenshor isn't crafting focused. it's more explore the world and conquer dungeons/(eventual) raids with a group of AI players in a world populated by AI players. like an MMO but one you play alone.
