Where should I start in the franchise? Is Oath in Felghana a good entry point?

Generally you can group them by combat system. Try Oath and VIII to see which system you like, plus I&II which is in its own group.

Ark of Shitty Nappies was my first then I went backwards. I still enjoyed what I believe were the psp remakes of 1 and 2

At least it was your first. It was really painful to play VI after Oath and Origin. What made it worse is that they retroactively made VI the conclusion to the Crystal backstory spanning Origin to VI.
