Fucking Florrick assaulting Wyll after he broke his contract. I would have expected an option like "You would believe a devil over Ravengard's own son?" something to moralize her and get back at her. But no, the only option to tell her to not believe Mizora is locked behind a history check, as if I needed to know about Elturel to know not to trust devils. And even then the option is way to diplomatic considering she insulted and assaulted us based on a DEVIL whispers, what kind of counsellor is this, seriously?

I'm pissed and I don't want to play anymore.

well the unfortunate truth is that you're not playing an rpg. you're playing a computer video game. w"rpg"s are more like choose your own adventure games than rpgs, and the sooner you come to grips with that and learn to enjoy them on their terms, the better.
true roleplaying only exists in tabletop format with a dm, and even then the dm has to be skilled at their role to properly allow for it.

I thought Gale was alright when not trying to rape me but he went from being ready to sacrifice himself for Mystra to wanting to become a god to challenge her in Act 3 without any transition, I don't get it.
I didn't bring him in the mind flayer colony so he didn't blow himself up but there was no dialogue or anything showing his change of character. Feels like cut content.

AFAIK the writings just bad. Haven't heard of anything cut in that regard. The writers are just not very good. The initial story was decent, but they clearly wasted way too much time on act 1.

An entire part of the character development missing isn't the writers being bad, it's a development problem. I'm not saying the writers are good, I don't like most characters, but they're probably not to blame for that.
I've seen multiple instances of inconsistent dialogues and it's understandable on a game this big.

Clearly the dev team is taking the L here. I don't think that this huge amount did anything for the game. Half of the cutscenes as in dialogues would be colossal as well and it wouldn't change a damn thing. Larian did waste money on this. I'd rather have 5 acts and half the dialogue, but more meaningful conversation, instead of 170h of repetitive cutscenes and a critical rushed act 3. I really thought we will get infernal cars to power with souls and fell zariel eventually.

I try to build a "character" for the PC (in the literary sense) from the choices presented rather than imagine a character in my head and then get mad when the game doesn't support that character, because you are never getting the latter.

That's what I did when I played Guild Wars 2
I started as a cool evil viking necromancer, but the PC has prewritten and voiced dialogues and he sounded like the most generic goodie two shoes so I just rerolled as the generic human warrior they wrote the game for. (then dropped the game not long after)
