As a matter of fact, my quick research using the most basic of tools (Google Ngram) seems to indicate that before the news started picking up on stories about cowboy gangs in Tombstone around 1880, English language sources preferred cowherd, stockman, and even a vaquero over cowboy to refer to cattle handlers.
