Why don't you imagine using a sensible control scheme?

>play early 3D games on DOS
>most camera controls are inverted by default
>get comfortable with it

Yup, I grew up before mouselook, using ALT to strafe, etc. when I was a kid I preferred inverted mouse for a while, and I remember in the late 90s shooter era I was still doing some weird hybrid of inverted mouselook + arrow keys instead of WASD. At some point I just dropped it and went to non-inverted mouse and WASD like everyone else.

There aren't any. After reading through the replies I can safely say that there is no single game that meets your criteria left. The few games that do like skyrim, fallout, stalker, cyberpunk etc you either played already or you are too picky to play.
My advice? Expand your taste in games or find a new hobby entirely because you will find nothing but disappointment with your current approach.

I told you. There are no games. You need to find out what you are going to do instead of playing in the meantime because it will be long few years before you will see any good game you like.

breath of the wild's pretty good about that actually
You do the 15 minute tutorial and then from that moment on you're very free to just pick a direction and go explore, and there's lots of open, natural spaces to go and wander. The game's great at giving you the "oh there's something in the distance over there, I want to go explore and see what that is" feeling.
"You see that mountain?" but actually delivering on it

'Inverted' was just 'normal' from inception of moving around camera views. It was only after NPCs became the main audience that this level of abstraction was too much for them and normal changed to inverted.

Enshrouded. But it's early access, and half the game is block building.

Huge world, very pretty, but most of the map's locked behind instakill red zones until you do the correct boss fights and base upgrades.

By being a direct sequel, it does come with "issues" for this specific aspect. There's less exploration because well, you've technically been everywhere already.
It works well as an expansion to breath of the wild, but it's not going to have the same feel as the first one simply by virtue of not being first.

Red Dead Redemption 2 is comfy as fuck. Nothing like riding through rugged mountains, plains, swamps and hunting everything that lives there. Tame a horse, hunt a bear, cook it, eat it, go to town, get a few brews, play some poker, brawl a woman's rights activist, lasso her and drag her behind your horse for a mile, sleep, eat, repeat.

If you play Gothic, also play Gothic 2 and 3. Maybe Risen and Elex as well.

And if you play Might and Magic 6, might as well play 7 and 8. Just don't mess with 9, trust me.

I would also like to add one more game: Wizardry 8. It's an open world, non-linear turn based CRPG with tons of depth and replayability. Highly recommend it.

That's because you're used to closely packed maps with markers.
One of the wonders of Sable is you're not given direction and every discovery actually feels like a discovery. It's a game about freedom, exploration and discovery, and in that it excels.

And I didn't want to post spoilers.
