That's completely subjective. Be it Vtuber music or not.

I personally really like Let Me Stay Here even if Fauna's vocals are a bit quiet. Bassa Nova is great and I wish more Holos did it.
Risu's 1:15am also does a pretty good job emulating that 80's jpop vibe well. Her ESL makes it a little rougher, but her vocals are good and fit well with the track.
Sweetest Scarlet is pretty good, but it might just be because I really.like the smooth jazz electronic piano parts of it.
All of Sora's accoustic arangements are great.

I like some of the SiIvaGunner rips featuring them. Daydream in the Chrono Trigger soundfont, Violet arranged in the style of His Theme from Undertale, Play Dice mashed up with Mad Heart from Mad Rat Dead, and AstroGirl arranged in the style of DS Rainbow Road are a few I enjoy.
I'm not really into a lot of vocal music though, so I shouldn't be counted as an average case. It honestly makes it really annoying when the one convention I can get to has EN doing one of their biggest things of the year, but it's just concerts while other cons get meet and greets, which are what I really want.
