Not just do they play these characters for years, they do it to a degree never seen before.
A professional voice actor in anime only needs to be in-character for a few seconds at a time. But vtubers stay in-character, cartoon voice and all, for 4+ hours at a time. Even long before I watched vtubers, that aspect I always found really impressive.

But while it is impressive that they CAN do that, a normal person would never do that even if they could.
