How the heck does the "Caspian Depression" work?
How is it all not just underwater if it's all below sea level??
Does the Caspian sea just vertically stop at the coast???

No, in general the caspian depression is slightly higher than the capsian sea.

It's far enough away from the ocean that the ocean doesn't flood into it. Even if you were to dig an underground tunnel from the ocean to the caspian depression, the depression could still exist as long as the water in it evaporates faster than the water flowing into it.
