1. Our diet is culturally dictated, through our families and social presures by various circles of ideologues, hardly ever a natural decision of uninfluenced individual.
2. You imply such diet is more enlightened or better, yet most such vegans/vegetarians have to supplement their diet to maintain health, because human bodies are expected to also consume flesh at least at times, we evolved for it and ability for most people to be picky rather than eating whatever they can is a very recent development in a history of human existence.
3. "Higher dimension"/"enlightened" beings would likely not need to consume matter to sustain themselves and if needing to do so, in control of their health and bodies to be able to consume whatever kind of food if willing. The "allergy" suggests not growing beyond food but actual loss of ability to handle some kinds of it - a flaw, a health, digestion or food quality issue, not a boon.
