I really like it because the Evangelion in concept art was all white and Anno wanted to make something opposite of all the mainstream mecha which was almost always some combination of red blue yellow and yellow. So it makes a good counterpart to the GQUuuux's grandpa colors. And in concept art it was pure white too.
