As far as Goblin Slayer goes, no and yes.
On the one hand, it is massively overstated in the sense that people act like goblins are hyperfocused on that and that it's all they do and they always make a point of it. When the reality is goblins are cruel little bastards and most of their prisoners get tortured to death sooner rather than later with no particular attempt to keep them alive long enough use them for breeding. While they won't bother to take someone alive if they're particularly angry, hungry, or it'd be a hassle to get them back to their nest.
On the other hand it's far from something that only happens with goblin lords. Shamans and hobgoblins can make a point of keeping women alive for breeding. Even regular goblins can do it, particularly if the number of goblins in the nest is low. For example the goblins that attacked that library in season 2 were just regular goblins, and of the nearly two dozen women at the library, they killed half of them and kept the other half for breeding.

The guild already has noobs ignoring the monster manual and ignoring advice to start with giant rats. So they aren't really in a hurry to try and get someone to make a more detailed manual for the weakest monster out their for noobs to also ignore.

There are a few reasons. The biggest is that goblins simply aren't important enough (on a grand scale) to warrant having one book about them be mass produced. Even in the monster manual, information about them is relegated to the most basic to save space for the more dangerous monsters. Second, Goblin Slayer is too dedicated to slaying goblins to take the time to write a guide about his work. He's also incredibly paranoid about not writing anything down because he doesn't want to pass on anything useful to the goblins should he fall to them.
It should be noted that at least in the Frontier Town, the Guild has built a training center where new adventurers can train and be taught by the veterans. Goblin Slayer taught a class on "8 Ways to Kill a Goblin Silently" there. As noted by another anon, the Guild also made a practice dungeon for aspiring adventurers to try out.

In general, goblins do have arrows and poisons, shamans can use magic, and champions and even some hobgoblins are more of a size to match. Armor needing gaps for mobility isn't unusual either, and getting injured in a joint through one of those gaps can limit mobility to the point where you can't effectively engage or flee.
