Nah, it’s a masturbatory power fantasy for loners. The central concept of this story is that other adventurers look down on the Goblin Slayer for only taking jobs exterminating weak monsters that no one takes seriously, which flies in the face of what the grave danger we're shown that these goblins present. Inexperienced heroes getting caught off-guard by the horrors of trying to face goblins doesn't work when we've already seen how clear it should be to any adventurer worth their salt that there's plenty of danger to the prospect of confronting a goblin horde. It makes the lack of regard that the denizens of this world have for goblins and the Goblin Slayer come off as arbitrary, just to force him into the role of misunderstood loner.

This brings me to my major takeaway from Goblin Slayer so far. So much of it revolves around playing up a misanthropic power fantasy. The hero is looked down upon by society at large, but he gets to be an unstoppable badass in his chosen role of goblin-slaying. The elaborate social revenge angle is hilariously palpable in one scene where he's being mocked by other adventurers, and you can practically hear the story bitterly seething over whatever graphic goblin-based fate should befall anyone who doesn't respect this underappreciated badass. At least he's understood by his cute companion Priestess who helps him slay goblins, his cute childhood friend who loves being protected by him, and the cute Adventurer's Guild clerk who doesn't judge him for taking goblin-slaying jobs. Goblin Slayer isn't subtle about pandering to the fantasies of its target audience.

Which is only smart if you are fucking shit tier pleb who takes the 'twist' at face value.

What it REALLY does is create the plot hole in the authors own setting of "if this armor is so fucking impractical and shitty, how is there an entire manufacturing economy that mass produces this stuff such that all these adventurers keep getting their hands on it? And how has no one figured out that heads are a vulnerable part of the body before now if all of the enemies do nothing but cheap shot the skull?"

Its like the entire world used to operate by different rules and, as soon as the story starts, suddenly all of the tropes stopped working and everything became gritty and realistic, and none of the characters have learned the new rules yet because last week this wasn't how the world worked.

It just the most garbage, bottom tier of power fantasy: the MC is stronk not because he is anything special, but because the entire rest of the world has been written to be inexplicably and illogically inept.

It’s a conspiracy you guys. The guild uses it meaningless rankings and promises of adventure to lure young and able bodied people to join them. This leaves their original villages lacking in workforce. Then they send said able bodied youth back to similar, but not the same villages, to do jobs they would have done for free for family or at a cheaper price. They guilds then take a portion of the fees for their own sake even though they’re the reason the villages couldn’t handle those jobs to begin with. Worst yet, the guild deliberately poorly manages everything, providing no training or resources, undoubtedly motivated by laziness and cheapness but also so a simple job a halfway trained team can do will take multiple teams wiping. True. The group comes across an enemy too strong to beat. GS has a scroll he has been holding onto that he doesn't talk about, which he pulls out and uses to cast teleport. Except that the teleport spell, despite its name, actually opens a portal (lets assume that was a mistranslation, for the benefit of the doubt) and he targetted the other side of the portal to the bottom of the ocean so that the deep sea pressure will shoot a stream of pressurized water out of the portal and one-shot the enemy standing in front of it, cutting him in half.
This, on the surface, seems clever. But its has 2 big problems that make it bad writing: the first is that there is no setup. GS pulls out and uses the scroll and insta-kills the badguy, and we only even learn that what he cast was 'teleport' after the fact as he explains what happened as he dumps exposition on the event after it is done. So we have no foreshadowing of the tools and even the people who were there with him in the room have no idea what just happened.
The second problem with the plan is that there is no in-universe reason that GS should know this was possible. He is not a wizard, so he knows nothing about portals. This is just a scroll he bummed off of another adventurer. But somehow, this guy that is already established to be such a goblin-killing autist that he is totally unaware of the continent-wide war against the demons because he just doesn't care enough to pay attention to common knowledge of current events, we are expected to know is both aware of the deep sea pressure at the bottom of the ocean, is aware of the concept of a water cutter, and has made the logical leap to use the teleport scroll to create a thing he doesn't know about using knowledge he can't have using a magic he doesn't understand. Its 'clever', but makes absolutely no sense for it to occur in context.

The whole premise of the series is that being in dangerous situations ill-prepared is going to you raped or killed. But the main five has plot armor, Priestess gets over the trauma of seeing her all party members being raped and killed in the afternoon.
When GS loses his consciousness during a fight, all his party members are seconds away from being raped or killed. Yet, nothing is lost from this, GS wakes up and saves everybody, nobody is missing any limbs or has new scars, Priestess was almost eaten by a hob, but is normal afterward, the goblins stripped Elven Archer while holding her on the ground preparing to penetrate... and it is never brought up again.

There's many brands of Gary Stu and a common kind is they're not special physically and they plan well, but the plans always go in their direction even if there's a million ways it shouldn't. What we see of him is just stupid.
There is no way for him to protect against goblins sneaking up on him from behind, what with his huge helmet.
There is no way for him to verify the quality of a weapon in the bad lighting of a cave, yet he happily trades his weapons for ones he's taken off of goblins inside the cave and then trusts his life to them not breaking in the middle of a fight.
There are many things that can go wrong when you are alone and don't have anyone covering for you.
But they never do go wrong. And the only time he falls for a goblin trap or falls unconscious in a fight is when he happens to have a team with him.
The original selling point of this story is that GS was not the hero of "the story" at large, but rather just some guy running around while the real protagonist defeats the demon lord. Instead he's this incredibly unique figure who survives death even when death should have been a guarantee, and "doesn't let the gods roll the dice" despite relying on luck for decent weapons to use among other things.

The plot armor shows in GS plans and tricks. They are usually quite ridiculous if you think about it more, as in the chance of everything going as he needs is pretty slim but huh, somehow he has a perfect success rate. Witch mentions in chapter 5 that she'd helped Goblin Slayer with an odd scroll request, and in chapter 6 when HEA is poking at the scroll he tells her it's a dangerous item and to not touch it. Dwarf Shaman and Lizard Priest then mention how magical scrolls are rare and often contain ancient magic, so by all means there's setup that the scroll will have an important use. The scroll's exact purpose was kept secret because it's supposed to be a surprise to the party and the reader at the extreme methods Goblin Slayer will use to kill goblins.

You are right that on his own, Goblin Slayer would likely not come across this knowledge. But he is familiar with Witch and she is happy to help him and give him knowledge for the right price. As for the deep sea pressure and water cutter ideas, I do agree that the main series doesn't address how the knowledge came to be, simply that it exists. Perhaps a curious wizard tried this in the past and made a mess of things and that's how the information was spread, but that's just a theory. There is also Year One, the prequel series, does address this and reframes the idea from high water pressure and cutting to a more simple "If you would drown at the bottom of the ocean, then bringing the bottom of the ocean to the surface could be an offensive weapon." We see his first use of a Gate scroll here, and from the aftermath we understand why Goblin Slayer was confident it would work on the Ogre. You can dismiss the Year One moments since they came in a prequel, but I figured I may at least mention them.

One last minor thing, but he gets the scrolls from either finding them in dungeons or paying the Smith to collect any he comes across. He then gets Witch to assess them.

Other posts are. This isn't setup. This is narrative setup but in-universe just another convenient toolbelt item. He lucked out on coincidentally getting a tool that coincidentally defeats this specific enemy and as a previous replier said about the Ogre hypothetically casting a lightning or electric attack which might've filled the whole room with electrified water and shocked everyone to death, there're many ways this could've gone wrong or backfired but very conveniently his tool happens to be a perfect fit for an enemy he never predicted. Unless narrative causality is a force of nature like meta-fiction, he got lucky.
