Why does 2001 anime look so old? I remember 2001 well since I was 14 at the time and it feels pretty recent.

That's where the confusion comes in, 2001 is modern.

The very beginning of the digital drawing era, you can't remaster stuff animated in SD

If you were watching new contemporary anime in the 00s you'd probably consider 80s anime "old"

Correct. Late 80s is old in a good way, early 80s is old in a bad way.

It was a lack of foresight during a weird overlap between two technologies. The shift from CRT to LCD had not yet occured but the shift from cels to digital had. 480i video that looked like art on a CRT looks like jagged aliased crap on an LCD. If the masters were on film then you could rescan them, but if the masters were digital "Broadcast Quality" 480p then that is what you were stuck with.

The art style itself is still old though

Because it IS old. People don't realize how much time has passed since then. The old hand drawn anime was phasing out and the new digital anime was coming in so now you can enjoy the oversaturated colors and cartoony look. DVDs have totally replaced VHS and CRT was on it's way out the door. All this crazy animation gets hammered out around 2005.

My question is about the future and when 4K will drop. I have a 4K monitor and all my images are tiny, even 1080p HD is small.

Things were starting to be animated digitally but the animators hadn't learned to use the new technology yet. Once people started to learn digital animation things looked way newer.
Diebuster(2004) looks like it came out just a few years ago.
