I watched the first episode of this because it was shilled here so much
Not only did nothing happen, but I had to double check that I didn't accidentally start at the wrong season because in the pilot they talk about how the quest is already over. I then thought that this is one of these shows where the first scene is set in the future, but then it flashes back and you see the quest. nope.
Does anything happen in later episodes?

If you were to keep it slice of life, they would have Frieren and Fern search for some spell to contact spirits, or look around to figure out the whereabouts of Heaven instead.
The first few episodes was just to lay down the proper backstory, context, and worldbuilding for everything that follows.

It existed to create a situation where all of the major magic characters (that'll be plot relevant later) had to come together and showcase their abilities, thus introducing them to the viewer (much like how they had Kraft show up for one episode just so the viewer knew who he was). I think the most important of that arc is Serie (obviously) and Ubel.
Also, it was an excuse to let the viewer see more of Frieren's combat ability, since there was quite a dry spell at that point. And to wank Fern more, obviously.

This was a critical plot element, that told us that Frieren was aware of large magical flying monsters in the area. Hence telling Lawine to watch the skies later on, and the whole thing about there being large magical monsters like the one that attacked Kanne. Frieren wanted to relax and rest of Fern's lap, but she was unable to see the whole sky, which was a serious threat to the safety of the party.

They went from 1CAD to 3 and now will have 2 assistant directors to support the series director (most well known for action), so must be planning for significantly increased workloads
