Some oldfag or any anon that likes to play historian can give you a more informed take, but a lot of those hyper violent shows came from the golden age of OVA's, when a lot of independent or smaller studios could afford to do whatever the fuck they wanted, which was extreme gore in a lot of cases. When that bubble burst and studios now had to work by the rules of the sponsors or commitees, they naturally didn't want to take as much risk.

There are still violent anime being made. It just doesn't appeal to Western audiences anymore so you don't see much of it talked about here. Anime that's popular in the West is often the inverse of Western media, because its the people who feel alienated by Western media that seek out foreign media like anime. I don't fully get why Demon Slayer as violent and gory as it is, it's still considered one if the most family friendly anime.
Seems people really get into the violence based on the context of it. Its like watching a kid get eaten alive but framed as the demon need to be stopped, rather than an exercise on how far can they push the gore.

Like you said context is everything, demon slayer isn't portrayed as a hyper violent show. It's got lots of primary colors, lots of humor and a paint by the numbers shonen protagonist story. I have a poor memory but I also don't recall any gore in the show, there might be some but it is fleeting if it exists at all.
The reason people still put the stuff on the past on a pedastal is because of how in your face and unashamed it was. There is no forgetting or contextualizing away what was shown in those older shows. It was raw and made to shock you.
Most of the violence in modern anime is always watered down by the way it is drawn or the style or the context.

Too much violence sometimes looks silly. For me it's more subtle lowkey terror killings that spook me. Specops raids were always terrifying to me.

Anime really didn't have a lot in the first place. It was really only a handful of shows that did gore and blood sprays. Problem is, you see one blood fountain, they all kinda start looking the same. Ceases to be novel. Anyway, one of the horror anime airing this season opened with the MC getting beaned in the head and having plenty of blood get all over. Unblurred of course. Nice and red. Oh and Shy Hero has some good monster gore.
