Of the characters that appear in the first 2 arcs, only Reinhard, Felt, Roswaal and Betty are unchanged, because they were always slated to be important characters.
Characters like Elsa and the three stooges were more of bit characters so they had simple characterization to start so I guess you could consider them unchanged as well from initial appearance.
Emilia as mentioned was planned, but he made an error.
Then as strange as it seems he appears to not have put that much thought into Subaru and Rem/Ram were initially filler characters that when he started writing he realized he more or less needed and then they became real characters and blew up the existing story flow because of how they would need to work (Arc 2 wasn't originally planned in terms of a story outline, but he recognized he needed it to build out Rem and Ram as actually relevant characters)
As such their characterizations when first presented is actually sort of wrong, with the very initial meeting being the only thing left of this.
In the WN Subaru is more openly perverse, hence his reaction to Rem and Ram. Rem and Ram are also more openly slutty seeming, again hence their initial reaction and playing off Subaru being a pervert. But most of this is removed in the LN conversion and is all gone in later parts of the arc anyway (readers didn't like Subaru's perversions it wasn't very endearing and seemed to cross lines)
But knowing how we know Rem and Ram act, even as a joke they wouldn't try to sell each other out, or if they did do a bit like that, Rem would break down crying and start saying she actually loves her sister or something. But it remained as-is and since it doesn't really affect anything its not technically a plothole.
