That's a very optimistic look that's assuming that there are no thief-/rogue-classes with something like a tracking skill and no mages with some kind of voodoo or far-sight/divination magic.

The main issue is that bandits don't really have a happy lifestyle. Being an outlaw means that anyone can do ANYTHING to you, you have no legal recourse. If they catch you, they'll hang you or torture you, and nothing stops your own fellow bandits from knifing you for the gold you have in your pockets.
Camping out in the wild and stealing supplies to live fucking sucks. Most bandits were poor as fuck, and lived transitory lifestyles at best. If they got big, the problems started when you had armies sent after them.
The closest analogue I can think (in recent history) are the semi-legal mercenaries who hunted Indians in the Wild West. Life with a scalphunter band was extremely violent, extremely brief, but could be quite profitable if you survived.
One account details two men having an argument over who got to rape a captured Indian woman, then they immediately got into a knife-fight.
Then the Indians caught up with them and half the band died, the other half only escaped via laying down serious firepower.

I'd learn earthshaping magic and start a construction company. First thing I'd make? Actual paved/stone highways between the major settlements. And aqueducts. Aqueducts are fucking rad as shit. Then maybe I'll make some sculptures, grand castles and dungeons and buildings. Something that monarchs will want to live in, adventurers will want to explore, demon kings will want to occupy. See with the Hundred Years War, where period of conflict and peace flip-flopped constantly, the various force had a great need of mercenaries, who got filthy rich and well equiped. So, those mercenaries, well equiped and with no other skills, decided to pay themselves by looting around.
