Bleach really has such absolute wack worldbuilding in terms of this ability/gene crossing. Similar deal with Naruto and all the special lineages going around that never mix for some reason. Maybe Ichigo is just a special snowflake and a natural Shinigami/Quincy child wouldn't inherit both abilities, but rather one, or maybe even none. I don't think we'll ever know since Kubo chose to keep Uryuu a celibate.

well yeah because normally the kid of a shinigami doesn't actually inherit any abilities. ichigo is an exception because he absorbed a massive lump of shinigami reiatsu from his dad that had been acting as a seal on White.
But there's nothing to suggest you couldn't just give a quincy an asauchi and train them as a shinigami through the normal methods
