A big part of it specifically is timing. I'll read a comedy manga, at my own pace, and think it's funny; but when it gets an anime adaptation, the same joke just doesn't land because the timing is off. You, for instance, would never see something like Abbot and Costello in Japanese, it's too snappy and fast paced for their taste.
The only anime I've ever found funny was Azumanga. It's so absurdist and off-kilter that the longer beats and odd pacing add to the feel of the jokes, rather than detracting from it.
