The anime originals I've rated as 5/5 since 2020 are Do It Yourself, Mecha Ude, and Hibimeshi. All fantastic but I wouldn't rate as "genre defining".

I would say that Apocalypse Hotel was a pretty damn good original anime but I think Lycoris Recoil was a really big one for sure this decade
