Fern has 3 areas in which she excels as a mage.
The first is mana suppression. A Serie noted, this is an impractical skill for a human to bother learning since it would take around 200 years of training to be able to fool a weaker demon unless you had an innate talent for it. Fern, like Flamme before her, has that talent. This is just innate to Fern. It's why Frieren didn't detect her the first time they met in the woods by Heiter's place.
Fern's second notable area is mana detection. Fern's really good at this and was able to see the instability in Serie's mana suppression as well as detect Solitar's presence near the great barrier of Weise when no one else could.
Fern's third notable area is casting speed. Thi one is the result of her training. Just spamming the one spell over and over and over again at the boulder. Because she's never branched out and learned a single other offensive spell, Fern is the fastest Zoltraak caster there is. And one of the fastest casters period. We've only seen her get outsped once.
Fern got rocked by the mist demon because his magic took all of the strengths out of play. She couldn't sense his mana since it was everywhere. She couldn't hid her mana, since he could sense everything in his mist, and her casting speed was rendered irrelevant. He would have killed her had Methode not bailed her out.

Its worth considering that every 'great mage' that we know of practiced Mana Suppression. Serie, Flamme, Frieren all do it. Serie says that she doesn't teach it to her students because she thinks it is a useless skill, but its genuinely worth considering that anyone who spends every waking moment actively controlling their mana is probably just going to be better at mana manipulation than normal mages who only draw on and use their mana when they want to do something in the moment.

Fern was taught to suppress her mana from a young age, and she is good at it. I think that there is a connection between that and the other things she is good at.

You are missing the whole part where he gets sealed up for decades and in that time humanity (well mostly Frieren) advanced it to such a degree that what he mastered was now the most basic fucking spell you can teach a mage.
