Usually it was trades/professions though. Baker, not Bread. Fletcher, not Arrow. Thatcher, not Roof. Fisher, not Fish. Archer, not Bow.
Of course nouns were also used. But this show just goes for straightup adjectives which is a bit jarring. It is kinda annoying because both frieren (freeze) and fern (far) are two of the sillier names while having the most screen time. I just mentally hear fern has the the plant and frieren as some Dutch Frisian name (the butchered jap pronunciation of the words helps with this).

Why not just change the names to an english word?

German references are pretty common in manga/anime, similarly British references. I think Japan's idea of Europe is informed more by these countries than any other.
Apart from the military connection with Germany, I learned a while back that the 19th century German Idealist school of philosophy had quite an impact on Japanese universities (see the "Kyoto school").

I think there's a certain attraction to stories with a clear good and bad guy that we've drifted away from. It's one of the reasons I like Frieren so much, in that it attempts to (so far, seemingly) bridge the gap between "clear good and evil" as well as "people thinking maybe there's some grey area".

That said I still haven't gotten around to watching LOGH so I'll have to get back to you on it. Though the centralization of power is foregone conclusion in my opinion, the only matter of debate is the range. It makes sense with low levels of technology to have different continents be their own kingdom, and for high levels of technology to dominate entire planets if not star systems.
The pure limiting factor is ease and speed of communications and traveling technology.
Beyond that it's simple human nature rebelling, but the larger group always has the advantage.

You can name characters random nouns like Scythe or Novel and get away with it, and occasionally get away with naming characters after verbs like Jump or Shout, but naming characters after adjectives is always going to lead to comical stupid sounding results.
