Would Boruto's story have been better if, instead of Boruto, it just focused on adult Naruto and his grown up friends, and simply gave all the new kid characters minor appearances, kind of like Konohamaru and his team in part 1 and Shippuden?

Possibly. Early on the Boruto anime had some pretty decent SoL episodes comparable to Naruto filler.

I think a lot about how amazing it would have been if instead of Boruto, we got a Naruto seinen where Naruto has to face the tough decisions that come with the reality of now being Hokage. There's so much you could explore and write about still with the world Kishimoto built.
Kishimoto might have been on board too. For example, IMO he played with the idea of Shikamaru being behind a coup after consequences of some of Naruto's decisions (we see him question Naruto's decision making after taking in Kawaki.)

The first arc/12 episodes of Boruto were really good IMO. Boruto was actually a pretty like-able MC and other parts of the anime like the comedy were really good. Unfortunately Boruto went under character regression IMO since some of his decision making does not make any sense given his personality from earlier in the series (chunin exams for example.)

Considering how much less gritty and mature Shippuden felt in comparison to part 1, I'd imagine that an actual part 3 of Naruto would feel like an even more watered down version of Shippuden. (so Boruto, basically)

I would have watched 1000 episodes of the new Uzumaki family being cute and wholesome

The worst part about New Generation sequels is that more often than not there’s nothing of note actually happening in the years since. It’s always about how things were peaceful and all of a sudden the action picks up right when the kids hit puberty. There’s something intriguing about seeing a character grow every single day, and seeing them transition as time goes on, and just going from cool young adult to mature no-fun adult offscreen is sad.
