A lot of what makes a bad cook is low prep skill, poor familiarity with ingredients, and not knowing how to discern a good recipe from a shitty one. You can have the best stovetop mac & cheese recipe in the world and someone would still fuck it up because they don't realize pre-shredded cheese has an anti-melt agent in it that fucks with the starch in the pasta and makes your shit grainy and rubbery. There's tons of ways you can fuck up simple stuff like cutting veggies too, especially shit like tomatoes where too dull of a knife/poor knife form gets you mashed tomato rather than a proper dice or round/hard stuff like onions & melons where there's a real chance you're getting blood in your food. People are retarded, it's nothing new.

Following a recipe can be tricky, if you can't read the recipe and don't know how to perform the steps. A lot of things in the cooking process also rely on intuition and tasting.
Arguably the biggest mistake bad cooks make is not tasting their food constantly.
