The story has unironically gotten better than most VNs. Lostbelt 6, which is in the later end of Part 2 of the story, has been widely regarded as Nasu's best work so far. However it is unreasonable to expect any new Fate fan to sit through the rough beginning to get to the good stuff.

The gameplay is shit, but the story is good. And you get to know a lot of servants and cool lore.

I was able to play Dragalia Lost recently by emulating it thanks to some lads in the community that got a private server running. Since it was just an emulator I could bypass all the RNG gachashit mechanics. Edited files to give myself roll currency and got whoever I wanted to play through the game with/listen to their character stories. No idea if this would work for FGO since it isn't EOS, but it's massively popular so there's a good chance someone made it possible. Other than that your only option would be to look for recorded videos featuring the characters you wanted to see.

Nasu's best work isn't even Fate, its Kara no Kyoukai. Maybe Mahoyo, if you prefer VNs to novels. I will still go with the game that every single shonen author has stolen from in order to write their protagonists for the past 20 years over FGO.
The second best Fate project is Narita's but that's more because FSF at least tries to be a little interesting and engage with the actual lore of Nasuverse while everyone else just kind of masturbates furiously. Zero is decent, but the ufotable anime was the beginning of the end for the fandom.
Regardless, the average FGO player has never read FSN, so their unfiltered dogshit opinion about it is irrelevant. Watching the anime is not the same.

I can't find numbers for Kara no Kyoukai since it technically isn't a Fate-related work, but for the record, Kara no Kyoukai had two events in FGO and both of them were pretty popular. In any case, that's a pretty large piece of the pie that has played the original Nasu works. I think you underestimate just how invested in the franchise Fate fans can be.

The story doesn't flesh out Gudao/Gudako's power very well until the Lostbelts, so in the beginning it is like "how exactly are you going to beat Goetia without any servants?", but in the Lostbelt arc it is explained that they can summon temporary shadow servants to help in battle, and the closer they are, the more they can summon. So Gudao/Gudako needs to be close to summon efficiently. They can do summons up to a range of, iirc, 2km, but that limits them to only 2 shadow servants, and it puts a huge stress on their body to maintain it at such a distance.
