Has the average IQ of anime/manga/LN authors just decreased too much to write stuff like this anymore?

Manga like this still exist. Hell, just faithfully adapt Umineko or Usogui, but the issue is diffused-substance anime like Frieren or conventional isekai do much better in market

The first half of Umineko question arcs (VN EP1&2) are just Beatrice writing fiction about facing off against a retarded incompetent imaginary version of adult Battler based on 13 y.o. Battler. The second half of the Question arcs (VN EP3&4) and VN EP6 are co-written by the duo of a rich woman and a crippled man.
VN EP5 is just some fanfiction that got popular on some imageboards but ultimately got shot down by the author duo that wrote another tale (we never got to see it, but is probably very similar to EP5 itself) as a sort of response just to humble the fanfiction writers and their Natsuhi culprit theory which resulted in the fanfiction being axed and not even properly finished.
VN EP7 is someone reading Eva's diary.
VN EP8 are Ange's delusions mixed with some actual in-universe real events.

It's not really a battle of wits. It's just the culmination of a lot of coping, woman moments, retard moments, identity crises, malice, obsessive love and finally maturity. The only in-universe real characters that haven't done something truly retarded are funnily enough just Jessica, Magic-ending Ange and depending on how things actually went the actual Battler.

Thats because authors can't writer characters smarter than themselves, so they have to make everyone else dumb. As you said true "wit" in media is the author writing the plot backwards so the conclusion will be the same but the characters can get there by continuing to outwit each other on agreed plot points.

There's still "battle of the wits" animu made. It's just they're being made off dreadful source material. Remember that show where every game had absurdly convoluted & overdesigned game rules and the winner just cheated to win every game thrown at him. That was real wit. IQ battle media is in a huge decline, not that it was ever that popular to begin with. It doesn't exist anymore, basically. There's still Detective Conan but that's basically it. The genre mostly died out 8 years ago along with the last of anything good, probably all due to the same cause (competency crisis). The latest media I can think of is a game, Rain Code. The Danganronpa successor released this year (Last Defense Academy) turned out not to be even remotely like Danganronpa and has zero to do with anything IQ or wits.

Even if the audience who would love to watch a battle of wits exists, and even if there's an author capable of writing it... I question whether that audience would have enough trust to keep the series afloat long enough to prove it. Does anyone really want to watch six episodes of the author setting up a proper foundation, only to then have the protagonist execute a "brilliant plan" a six-year-old would see issues with, and watch the universe force it to work anyway (maybe with a few mid-plan saves) because, well, the author says it does? Because I wouldn't, and that's how half of the medium's "smart MC"s are written.

Protagonist knows Archrival is a deeply religious man, so while Archrival is traveling, he bribes a priest to tell him he's had a vision; knowing Archrival is likely to take Option B as a consequence, he warns the king that Archrival is plotting, and Option B (that he shouldn't know about except for the earlier manipulation) is the sign of this plot the king needs to watch for. Meanwhile, Archrival isn't sitting quiet; he's found evidence of Protagonist's dirty dealing, and presents it in court. The two plans colliding, neither gets what they want as the king trusts neither of them and hands the new territory over to a loyal-but-useless pawn - and the next phase of their battle of the minds is how to take control over this soon-to-be dupe.

That's what makes a good wits battle, in my opinion; both sides taking advantage of the other's character flaws to guide an outcome. Trying to make something "Oh, they're a genius and nobody would ever think of this!" tends to run afoul of the fact that, well, most authors aren't actually supergeniuses.
