What does "deep" even mean? Dense with themes and/or references? Esoteric? That's what "going beyond the basics, the surface, the obvious" presumably means, but that doesn't have much to do with messaging, which the original post seems really focused on. Assuming it really is about being dense, do these references and themes even have to add up to anything that can be considered impactful, or is pure aesthetic value enough to be "deep" if there's enough there to dig into and unravel? Is it supposed to be subjective, or is it somehow objectively quantifiable, and if yes, then how? Is it supposed to be an intentional quality, or can some works just accidentally stumble into being deep by chance or even out of ineptitude? And, like, you can go on and on with questions like this. OP, if you want a discussion thread, you have to define the term you're discussing.

REAL and Slam Dunk are both great manga but while Slam Dunk promotes that willpower and friendship are the key to be a basketball player, REAL questions that, in other words, it goes further and takes us further too.

The only questionable thing is the controversy regarding the demons, but I personally think the author is pretty open about it unless you just learned to read.

For me with Frieren it's not about the plot, it's about the production values, that why I consider it nonpareil a deep way of saying "without peer" among anime. It's a combination of excellent animation, excellent music, a story that feels vast because it has a timeframe measured in centuries though it drills down into periods measured in years because it's fundamentally about Frieren's human companions, not the eponymous immortal being.
I could only describe some novels (English fiction) that I would consider "deep" but even those are fundamentally entertainment value; I like them for the same reason I consider Frieren special, because they are vast in scope but very personal when actually reading them.
Anime is really just entertainment for me, but Frieren came the closest to eliciting that sense of awe.

That's... basically the same thing since Fern has known Frieren since she was really little; Stark joins when he's a young man but we also get exploration into his childhood and what shaped him.
It's about all three of them and yes, their journey together. And ancillary characters.
But maybe it's not for you. It has a meditative quality that some of this board with their neurosis recoil at.

I consider Frieren to be equivalent to the Drizzt novels in terms of writing, plot setting, and characterization. Which isn't a compliment. It's a very shallow story polished to all hell (and even then, the quality of the anime is simply better than most seasonals), which becomes quite apparent if you've read the manga. I dropped the series back in 2022. It wasn't even the best anime of its own season! However, I do agree with you that there isn't a such a thing as a "deep" anime and that anime is simply entertainment. Ironically enough, Hellsing Ultimate is one of my favorite shows.

The one thing I need anons to understand is that JP moral law enslavement ruins everything 9 times out of 10. Whenever an anime or manga sets up an interesting premise, question, theme, etc, it will almost ALWAYS subvert itself. Why? Moral law. Protagonists can NEVER do or even appear to do anything too edgy. Anti-heroes is as far as it can go; you’ll NEVER see a serious moral grey area or thought-provoking idea explored. Demons (translated from β€œMazoku” the standard enemy race in isekai) are like that because that’s the NPC setting, and the narrative just plays with the trope a little.

The narrative doesn’t even TRY to paint Light as protagonist or even as an anti-villain, he’s just a straight-up villain, the only unique thing about it is that the villain is also the main character, but in moral law the villain MUST be defeated by the good guys, and so L gains supernatural powers and does just that. It would hardly be any different if L was the MC instead, just the narrative flow would be different.
