That and the Demon King was actually NOT the great evil that would require the legendary hero.
More than likely its the human Emperor who will become the great evil that a hero will need to pull the sword, not to use it to kill one person, but to get people to follow it.

And probably that Hero is one of Fern and Stark's children or grandchildren.

The sword is meant to be pulled by the legendary hero who will save the world from a great darkness. The Demon King was the greatest threat that the world knew at the time, but that doesn't mean he's the greatest darkness that the world will ever face.
The sword is waiting for a more epic, greater threat to the world. Count yourself lucky that it happens in the future, and not in your lifetime.

There will come a time when the sun no longer rises, when humanity is reduced to a single fortress city whose defenses are worn down battle by battle every day. A world where demons have come into the fullness of their power, and mankind's great works are empty shells that dot the ruined landscape. A world where hope and courage are a precious, dwindling resource.
That is when the hero's sword is meant for.

Because the legend of "whoever pulls this sword is the true hero" is made up. Point of Himmel is that even if you're the right guy in the right situation, it doesn't mean you were chosen by fate. Sometimes you can be a hero just because you're the guy that chose to be the guy.

I think it was to show that the sword wasn't all that special.
It was powerful for sure but it wasn't meant to be the "sacred weapon of prophecy", people just believed it was.
Anything could kill the demon king, probably even a knife, it's just that THAT sword was so powerful that it could reasonably kill him. It was the equivalent of a nuke for a last-case scenario.

It wasn't waiting for someone worthy, it was waiting for the demon king himself
