This is never shown, explained nor given as a reason for why Genya changed. He never goes through the process of changing, ever. He has no actual character growth that's shown. He's just a nice guy all of a sudden.

Good of you to ask. All in all, it accomplishes several things, it's simply cool, there's a meaningful coincidence, and the reader looks and thinks 'this is spooky'. It introduces ambiguity for the watcher to ponder; "did that actually happen?" Makes you think. In a functional sense, it accomplishes being a training montage and showing how tanjirou grows stronger. More than that, is thematically. It introduces the theme of afterlife that will get explored later on. There are other themes such as passing on the torch, that becomes a theme as well as the spiritual themes, in this case by having the ghost teach him. It's really well-done. if I'm allowed to opine, kny peaked there.

It's in the boulder scene that kny shines. Tanjirou doesn't immediately slice the boulder. No, in fact, he has to train in order to do it. Training is an essential aspect of fighting manga since DB. Goku learned discipline and this would later separate Goku from the common Saiyan; he's no mere warmonger but a true martial artist.

Tanjirou not immediately slicing the boulder establishes that this isn't your average isekai/shonen where typically the mc would be overpowered or get a cheat skill. If that were the case, the cheat skill would immediately destroy the boulder to establish that narrative. Demon Slayer proves that it is in fact a true martial arts series when the boulder fails to be sliced, letting the protagonist learn defeat.

Added to that is his ghost mentors. There's an element of inherited will or passing the torch introduced. Tanjirou is carrying the will of the fallen ghosts. It's thanks to them that Tanjirou can destroy an even bigger boulder. This becomes a recurring motif in Demon Slayer. For example, the Sun Breath is passed down through a dance.

There's of course a certain ambiguity and suspense as to the origin of the ghost mentors. Do they have real existence? This mixture of the mystical and mundane is an interesting aspect of the series. That too becomes a recurring motif.

I need of course not mention Ufotable's marvelous work. It's animated by Ufotable and the fight being on the beginning and not the end of the series means animation is at its peak. This makes Tanjirou vs boulder one of, if not the, best fights in shonen.
